Matter is anything that has mass or takes up space. Three of the recognized five states of Matter are solid, liquid and gas. (The other two are plasma and Bose-Einstein concentrates) As different forces are applied to matter, like heat, matter can change from one form to another: solid to liquid, liquid to gas, or solid to gas.
