Dougie is from Essex, a county in the south east of England, and he is making a Christmas yule log, a festive classic known for being rolled up and having lavish decorations. Dougie starts by separating eggs. Caster sugar and cocoa powder is added and mixed into the egg yolks, then the egg whites are whisked until they are light and fluffy. They are added to the chocolate mixture. Once baked, whipped cream is spread over the cake and his special ingredient, red currants, are sprinkled over. The cake is then rolled and decorated. Dougie has a Christmas gift for all his friends, but will they like the taste of the redcurrants inside his yule log?
