Canadian wine expert Michael Fagan says that there are two paths to follow when pairing food and wine. One is to complement; to cleanse the palate, refresh and make you hungry for more. The other is to contrast and pick up flavours to give a whole different perception and experience. He pairs a white wine, which is a fairly standard choice, and a red, which makes an unexpected and surprising match, with a Northeastern dish.
