In Aunt Tilley's house, Kyla and E.B. investigate random objects in the file drawers they inherited from Great Aunt Hermione that show how history connects to who we are and how we live now. The label '#1', the gang realizes, is a clue for them to look for the best of something. But what? Turns out, they're looking for the best bread, as they make challah with a baker, bannock at the Tea-N-Bannock First Nations Café, and pizza at Libretto. Yeast is the magic ingredient that makes breads airy - breads like naan, sourdough, ciabatta, pumpernickel, and baguettes. Using grains to make food allowed people to stay in one place in the early days of civilization. Kyla learns that bannock is a First Nations bread adapted from the Scottish scone. E.B. learns about making pizza dough, also a yeast-based bread product with a long history. Breads often remind people of their childhood and it is an important part of many cultural heritages and modern meals.
